Mother’s Day, Easter, Maine Maple Sunday or just celebrating the warmth returning, here is a special breakfast ideas with a Vegan twist. We have taken French Toast and made Vegan FRESH Toast.

At our Maine Inn we love to serve the traditional favorites for breakfast. One of our popular items is French Toast. The traditional way to prepare this decadent toast is with local eggs and dairy products and serve with Maple syrup.  To make French Toast FRESH Toast, you just have to tweek a few ingredients. The bread you choose should also be non-dairy. Read the label. Sourdough bread is non-dairy and great choice.

Ingredients:

  • 2 slices of non-dairy bread
  • 1/4 cup non-dairy milk, almond or coconut
  • dash of vanilla
  • dash of cinnamon
  • 2 mashed ripe bananas
  • unsweetened coconut
  • coconut oil/ or earthbalance

Process:

Soak the bread in the non-dairy milk, vanilla and cinnamon

Press smashed banana and unsweetened coconut onto bread, dash with more cinnamon

Fry in coconut oil or earthbalance on both sides.

Serve with maple syrup.
